“Don’t go too light. An unsatisfying bowl of lettuce is not dinner and is highly likely to lead to a snack attack that will leave you feeling anything but confident and strong! I love a mix of greens, protein (including beans, nuts and seeds), healthy grains (like quinoa) and good fats (like nuts and olive oil).”
This Far East Quinoa Tabouli Salad is one of Chef Ninamarie’s favorites (and ours too) – – healthy, yummy and easy:
Far East Quinoa Tabouli Salad (Serves 6-8)
3.5 C of Cooked Quinoa, cooled
7 Small Cucumbers, peeled + thinly sliced
1 28oz Can White Beans, drained + rinsed
2 TBS Parsley, finely chopped
1.5 TBS Cilantro, finely chopped
1 TBS Mint, finely chopped
1 TBS Tahini Sauce
1 TBS Sriracha Hot Chili Sauce, or desired amount
1.5 TBS Soy Sauce
1 TBS Rice Vinegar
3 TBS Lemon Juice
1 TBS Toasted Sesame Oil
2 TBS Olive Oil
2 TBS Peanuts, finely chopped
Salt & Pepper, to taste
Toss all ingredients together in a large bowl + serve!
