She said “I’ll pay you $100 each month if you cook for the whole family twice a week.” snowwhitegiphyEven though I had not really done any major cooking before, I gladly accepted the challenge. I thought to myself, “This is my chance to cook whatever I want. It is my opportunity to attempt to make a ton of nutritious, healthy foods and get my family to eat healthier.” So that is exactly what I did, and now I am going to share with you some of the great, healthy, homemade recipes I discovered during that summer that will make you feel healthier, accomplished, and more confident in your cooking skills.

amypoehlerwafflegiphyMost of us who have to get to school or work early know the difficulty of trying to wake up and get ready as well as put some type of food in our stomach so that we aren’t starving all day. You know what they say, “Breakfast is the most important meal of the day.” If you are a huge breakfast person like me, the thought of not eating breakfast hurts your head and your stomach.
ryangoslingcerealgiphyYou can always put some sugary cereal in a cup and eat it on the way to class,  but that can get messy with milk and most breakfast cereals contain unnecessary excess sugars that are extremely unhealthy. Granola bars are another option but studies have found that many granola bars really aren’t beneficial to your health and just like cereals, contain excess sugars. One of the best options is to make your own to-go granola Energy Bites.


I discovered this recipe from cookingclassy.com that allows you to make these lovely and delicious little Energy Bites that are easy to make, eat, transport, and store. What I love about this recipe is that you can make multiple batches and then save them for weeks to come. For a busy college student like me, this recipe is great because the Energy Bites take very little time to make and they have a long shelf life. They are the perfect snack for anytime of the day! These are a simple, healthy, and homemade alternative to granola bars and other complicated breakfast foods which will last up to 3 to 4 months. With these Energy Bites you know the exact ingredients and how much of each one that is going into them. You are creating these snacks, and you control what goes in them which makes them as healthy as they could be. You get the satisfaction of creating your own masterpiece and enjoying the benefits of this healthy snack. These Energy Bites will be sure to give any busy person the energy and nutrition that they need to take on their day!
