Cooking With Confidence – Sunday Brunch

It’s the perfect end of summer Sunday.  Maybe you want to spend it relaxing out by the pool, or maybe just lounging around in bed.  Perhaps your plans include that special someone, a bunch of friends, or maybe simply you and your own best friend…you!

You know you want an amazing brunch  to be a part of this Sunday morning, and going out is definitely not part of the plan.  Whether you’re a gourmet chef, or you don’t feel so confident in the kitchen, our advice?  Keep it real!  Keep it simple!  Keep it easy.  You want to be able to relax and enjoy without making yourself crazy with complicated recipes.

Here’s our secret for an awesome brunch that looks beautiful, and that’s a cinch to prepare.

The trick on this one!  Be sure to choose pretty dishes (we like simple white china), and to arrange your food attractively (the photo gives you a great example to work from).  You’ll feel confident serving your gorgeous meal, and it’s sure to impress:

Poached Eggs Over Arugula with Hummus, Tzatziki and Taramasalata Paired with Tomato Cucumber Salad and Icelandic Yogurt With Berries and Granola

For the Yogurt, Granola and Fruit:

We love icelandic yogurt for its high protein and low sugar content, a great combo for healthy eating at any meal!  Siggis is our favorite brand, but you can try any icelandic yogurt or if you prefer, greek or any other yogurt will also be great:

In a bowl, Top one or two containers of plain yogurt (up to you) with granola of your choice (as little or much as you like)

Garnish with fresh berries.

If you would like to drizzle with honey.


For the Eggs:

Poach Two Eggs (note, if you do not feel confident about poaching eggs, scrambled or fried eggs will work great here too)

Place eggs on A Bed of Arugula (or any green you choose)

For an interesting accompaniment, fill little bowls with fun and different ingredients like store bought hummus, tzatziki and taramasalata or unusual dips of your choice


For the Cucumber & Tomato Salad

½ English or Seedless Cucumber Diced

2 Vine Ripened Tomatoes Diced

A Handful of Chopped Parsley

½ Medium Red Onion Chopped (Optional)

2 Tablespoons Red Wine Vinegar

2 Tablespoons Extra Virgin Olive Oil

1 Teaspoon Lemon Juice


Combine all ingredients in a bowl.  Add salt & pepper to taste.
